Fresh, finesse, balance.
The reserve Chardonnay from T7 is 100% barrel fermented and aged, from grapes harvested from the Becker Vineyard on the Black Sage Bench, in Oliver and went through spontaneous fermentation. The fermentation was in 100% French oak barrels, of which 20% were new. The barrels were stirred for four weeks, to increase lees contact and add roundness to the palate and underwent partial malolactic fermentation.
Notes of yellow apples are woven with toast and grilled lemons, wet stone, roasted hazelnuts and spice. The palate mimics the freshness of the nose; citrus, toasted spice and hazelnut flavours dominate. Nice finesse and balance here, not overbearing and oak laden.
Pair: lobster, cedar planked salmon, creamy chicken dishes, creamy fettucini, grilled white fish, breaded and fried oysters, roast chicken or squash ravioli.
